This month’s event will consist of a magnificent five-course dining experience brought to you by Executive Chef Steve Frank + Cherrie Griffin, featuring fresh, local ingredients. Each course showcases a hand-selected ale or lager to compliment your meal.
Course One: Jamaican “OX” Patties
saffron dough, braised oxtail, salsa verde
Course Two: Charred Curry Wings
yellow bell pepper curry, braised savoy cabbage, coconut broth, mango-habanero puree
Course Three: Island Smoked Trout Salad
trout smoked with cherry & applewood, salad of papaya, jicama, mango, red chile, crisp plantain
Course Four: Jerk Suckling Pig
slow roasted with a ‘jerk mop’, duck fat braised collards, red beans & rice, ‘bahama-mama’ barbecue sauce, cocoa bread

caramelized pineapple, rum caramel, coconut ice cream
